Apple Fritters

A few weeks ago while I was looking for a recipe in my recipe book that I compiled for a Young Women's project while I was in high school, I came across my Mom's fritter recipe. I remembered how much I loved it when she made applesauce fritters for breakfast so I made a mental note to make fritters for my kids sometime soon.

I made the fritters this morning and they were so good I decided to write about them and share them. The were defiantly not on my diet, but sometimes you have to create a food memory for your kids even if it isn't on your diet. Can you tell that I love to eat? I also happened to marry someone who REALLY loves to eat so it was fun to make something new for him too.

Here is what my family thought about the fritters:
  • Chad said they were really good, he went back for seconds so I know he wasn't just being polite.
  • Spencer loved them.
  • Bryant didn't get to try any fritters because yesterday he threw a fit and was disrespectful to me and so he had to eat beans for his next three meals. (Thanks Shon and Pam for the bean idea.) Don't feel too sorry for Bryant, I will make the fritters again sometime so he can try them.
  • Karalee didn't care for them, but she doesn't like breakfast much and she really doesn't like sweet syrupy things for breakfast. (Unfortunately she didn't get that from me.)
  • Marlee liked the fritters.



The recipe:

Fritter Batter
1 1/3 c flour
1 1/2 tsp baking powder
1/2 tsp salt
2/3 c milk
1 beaten egg

Stir in desired fruit (I used about a cup of apple sauce, I didn't measure it), vegetable (My mom used to make corn fritters with left over corn from Sun. dinner, but I like the applesauce fritters better), or meat (I have never had fritters with meat, it sounds kind of gross to me). Drop from tablespoon into deep, hot oil. (375*) Fry 2 to 5 minutes. Drain on paper towels. Break open and sprinkle with powdered sugar and drizzle with syrup. Enjoy!

Kitty Cats

About a week ago we got three kitty cats. We have been having a big problem with gophers in our yard and so I thought it was time to bring in the heavy artillery. :) I got the cats from craigs list. All three of them are outside cats, they have all been fixed, and are all litter box trained.

The first day they got here Skitty ran under mine and Chad's bed. We couldn't get him out for a long time. He was scared and so he started scratching and biting us. Finally we took the mattress and box spring off the frame and got him outside.

That same night the two males, Skitty and Mario (formerly known as Hercules), jumped over the fence. The female, Tiny (who happens to be really fat), stayed around for a day or two. We see Mario and Tiny come around when in the evenings when we feed them, but we still haven't seen Skitty. I think he might come in the middle of the night, but unless we set up a camera or something we may never know.

It is fun to see the kids enjoy their new pets. I am glad they are such low maintenance. Here are the pictures I tried to get of the kids and the cat. The kids are a little afraid of picking up the cat because of the bites and scratches Chad and I got when we were trying to get Skitty out of the house.



Can you believe how tan Karalee is? It is still the start of the summer. If I get pulled over I better have her birth certificate with me so she doesn't get sent to Mexico. :)

Love notes

I just walked into my room and noticed these notes Spencer wrote to me and left on my pillow. He is such a thoughtful boy. He and Bryant leave notes for me all the time. I am so lucky. I LOVE them!



Grandpa Angle's 80th Birthday Party

We had a really fun day yesterday in Thatcher celebrating Grandpa Angle's 80th birthday. We completed a session in the beautiful new Gila Valley Temple. After that we went to the park and had a BBQ and played games. Grandpa played Run Sheepy Run with us and did some foot races. He is still fast. Now I know where Chad's speed comes from. It would be really cool if there were a way to see Grandpa and Chad race back when Grandpa was in his prime. I think Grandpa really would give Chad a run for his money.

After the races were over I asked Grandpa if he was going to be sore after all that racing and he said his legs would probably be sore. Then he said that he hasn't run in years and that if he would've known he was going to run he would have started training a month ago so he could beat everyone.

What a blessing to be so active when you are 80. We love you Grandpa and hope that we can be in as good a shape as you when we are 80!

Last Day of School 2010

My boys' last day of school was last Thursday. I am so excited for the lazy hazy days of summer. Here are a few shots of Bryant's kindergarten graduation and Spencer's end of the year party.

Art Sanders' Family Pictures

Yesterday we took family pictures with Chad's family before his sister Deserie leaves on her mission to Salt Lake. The first one is our crazy picture. The second one is the one that turned out the best. I am sure Art will Photo shop a few things though.

Yesterday while it was my turn to attend a session of The Gila Valley Temple Dedication Chad helped the kids construct these Lego towers. I was impressed.
